White truffles and rarer than black truffles and have a slight peppery taste with a hint of garlic. Used as a finishing oil, rather than frying, white truffle oil can be drizzled on eggs, pasta, salads or used as a dipping oil with warm crusty ciabatta bread.

Tartufi Jimmy is a small artisan company based in Pietralunga, a small medieval town in Umbria, Italy.  Jimmy was the name of the founder's first truffle hunting pig.
