Instant Polenta, a staple of Northern Italy, is essentially a type of porridge made from cornmeal, water and salt. Commonly made from yellow corn varieties, it can also be white and varies from a fine to coarse grain. It is an excellent starch alternative to potatoes, pasta, rice etc.
Instant polenta, the type you'll most commonly see in Kiwi supermarkets, is made from cornmeal that has been steamed and dried. While it doesn't have the depth of flavour of slow-cooked polenta and can be more inclined to lumpiness while cooking, it does have the advantage of being one of the fastest starch dishes to prepare.
