Gramigna Pasta Granoro are short squiggly hollow tubes of pasta, originally homemade but now mostly made with an extruder. They used to be only eaten as a fresh pasta.
Gramigna are almost invariably served simply, and heartily con salsiccia with onions, sausage and passata. This is a very common and popular menu item in Bologna’s homes, restaurants and trattorias.
