Freekeh is young green wheat that has been toasted and cracked. It's a healthy whole grain food, much like bulgur wheat and other whole grains. Like quinoa, freekeh makes an excellent source of protein for vegetarian and vegans.
Freekeh is great making pilaffs, in salads and for serving with lamb or chicken. Its earthy flavour and slightly coarse texture go particularly well with sweet spices
