Hulled buckwheat is a grain and not wheat. The hulling process removes the outer husk to obtain the grain-like seed inside.
Buckwheat contains healthy fats, protein, antioxidants and soluble fibre which slows the absorption of carbohydrates in the blood stream therefore preventing spikes in the blood sugar levels. Buckwheat is great added to cereals, salads and hot grain casseroles. Buckwheat can also be ground into a flour and used to make breads and other baked goods.
